There are flavors that take us back to moments with the family or to when the smells of sofrito filled the house. If we had to make a list of recipes that could be considered essential , a rice with chicken and vegetables in the most classic style would be among them.
As you will see below by reading the ingredients, this is a more traditional dish, where the best of all is that flavor so characteristic of rice dishes.of our childhood. The aroma of seasoning the laurel branch, the mixture of textures of all its components or giving it our little final touch with a bit of freshly squeezed lemon, are some of the delights that this chicken rice recipe brings us.

Ingredients

(For 4 people):
400 g of SOS Round rice
1/2 Kg of chicken breast
3 tomatoes
3 cloves of garlic
1 onion
1 large green pepper
1 large red pepper
Laurel
Olive oil
1 liter and 1/2 of broth chicken
½ glass of white wine
Coloring
Peas (already boiled or canned)
Salt
Pepper
Lemon

Elaboration
We start by preparing the sofrito . We cut the vegetables: onion and peppers, preferably into strips. We reserve it.
Cut the chicken and season it with salt. Heat the oil in a pot (about 8 tablespoons) and add the unpeeled garlic, the bay leaf and the chicken . We put it on high heat until we see the golden chicken, then we take it out and reserve.
Then we add the chopped vegetables and put a little more salt, let it poach .
While the vegetables are cooking, we take the opportunity to peel the tomatoesand clean them of seeds, chop them very fine so that they dissolve well in the fire, to which we will add as soon as the vegetables are poached. We leave it for about five minutes on a medium-high heat.
After this time, it is time to pour the white wine and let it cook until it is reduced. When we see that it is dry, we add the rice, fry it for a minute and add the chicken.
We remove and quickly add the chicken broth (previously heated) and a pinch of food coloring , which will give it that typical yellow tone. We mix everything, correct the salt a little if necessary and let it cook for 5 minutes on a powerful fire.
After these 5 minutes we lower the intensity and cook for 8 more minutes, one minute before finishing cooking we will add the peas .
When we get the rice to be ready, it will be time to remove it from the heat, cover it with a clean cloth and let it rest for approximately 5 minutes before serving.
