- Once cooked, you can freeze them and keep them in the freezer for up to 3 days .
Ingrediants:
- 40 gr of erythritol ;
- 115 grams of almond flour ;
- 10 g of inulin ;
- 10 grams of oat fiber ;
- 150 gr of fresh cream ;
- 3 eggs ;
- 15 gr of melted butter (not hot);
- a sachet of vanillin ;
- seasoning to taste;
Preparation:
- Take a very large bowl and put all the ingredients in it;
- Take a whisk (hand or electric) and start mixing until it forms a fluid batter;
- Take a piece of butter and grease the pan (let it melt over low heat);
- Now pour the batter with the ladle in such a way as to form the pancakes;
- Cook for about 5 minutes maximum (depending on the thickness chosen), remembering to turn them at least once halfway through cooking;
- Place the pancakes on the plate and season to taste.
Ketogenic Chocolate Pancakes
A great alternative to the classic recipe is chocolate pancakes!
General informations:
- Preparation: 20 minutes ;
- Cooking: about 5 minutes ;
- Quantity: with these doses you should be able to obtain about 10 pancakes
- Once cooked, you can freeze them and keep them in the freezer for up to 3 days .
Ingrediants:
- 115 grams of almond flour ;
- 2 eggs ;
- 60 gr of soy milk ;
- two tablespoons of unsweetened cocoa ;
- a pinch of cinnamon ;
- a drop of seed oil ;
- dressing with yogurt (to be prepared)
- sweetener
Ingredients for the yogurt dressing:
- 100 gr of Greek yogurt ;
- 20 gr of chopped dried fruit
Procedure:
- Take two bowls and the eggs;
- Separate the yolk from the white;
- Put the sweetener by eye, according to how you like it, to the yolk. If you are not sure of the quantity, add a little and then adjust the seasoning;
- Take a whisk and beat the yolk;
- Add the soy milk and continue whisking;
- Also add the rest of the ingredients: flour and cocoa (previously sieved);
- Put the cinnamon and keep stirring;
- Now beat the egg whites until stiff
- And incorporate them in the other bowl;
- Mix until you get a homogeneous batter without lumps;
- Melt a small piece of butter in a pan (low heat);
- Pour in the batter and form your pancakes;
- Cook for no more than 5 minutes , remembering to turn them at least once halfway through cooking.
Coconut Pancakes Coconut

Ingredients:
The ingredients you find below are only suitable for 2 pancakes , therefore a single dish. Multiply by how many pancakes you want to make.
- an egg (of which, however, you will only use the egg white);
- a spoonful of coconut flour ;
- a spoonful of mascarpone ;
- a pinch of yeast ;
- a teaspoon of erythritol ;
- a spoonful of almond or coconut milk ;
- butter or coconut oil for the pot;
- dressing with: hazelnuts, coconut turnips and sugar-free syrup.
Procedure:
- Take two bowls and separate the egg white from the yolk. For this recipe you only need the egg white so put the yolk aside and use it for something else;
- Whip the egg white until stiff;
- Take another bowl and put the flour together with the yeast, the erythritol and the mascarpone;
- Mix everything;
- Add the whipped egg white with delicate movements, from bottom to top;
- Now pour in the milk while continuing to mix. Pour it until you have a creamy but not liquid dough
- Melt a bit of butter or heat a little oil in a pan and then pour the mixture;
- Do not cook for more than 5 minutes , turning the pancakes at least once halfway through cooking;
- Serve and season to taste

Procedure:
- Take a bowl and put the eggs, erythritol, cinnamon and cheese;
- Start mixing the mixture;
- Sift the flaxseed flour and add it to the mixture obtained;
- Stir again until you have a homogeneous mixture without lumps. If it turns out to be too hard, pour a drop of whole milk. If, on the contrary, it should be too liquid, add a little flour (without exaggerating);
- Let the mixture rest for at least 2 minutes ;
- Take a piece of butter and melt it over low heat in a pan to grease it well;
- Begin to pour part of the mixture with a ladle to create your pancakes;
- After cooking, turn the pancakes;
- Cook up to a maximum of 5 minutes ;
- Remove the pancakes and place them on the plate;
- Season to taste. For savory pancakes, a good topping would be putting tomatoes and avocado on top, for example.
