The ketogenic or keto diet is based on a principle of increasing ketone bodies that occurs through stimulation of the organism. The stimulation of the organism is caused by a low carbohydrate diet. This clashes hard with the Mediterranean diet that we have where everything is based on white flour. When it comes to sweets it is even more difficult to find an alternative, but it is there and it is very healthy: keto sweets with almond flour. In this article I present three super good recipes suitable for three different occasions:
- waffles keto;
- soft cake for snacking and soaking (to be accompanied with a glass of milk or hot tea);
- keto birthday cake
Waffles keto Waffles
are typical Belgian sweets that have now conquered the whole world. They can be eaten for breakfast as well as for a snack, in summer and winter. They are not difficult to prepare but, you must have the waffle maker! If you are following a ketogenic diet, you don’t necessarily have to give up these sweets. It is indeed possible to create low-carb waffles and therefore keto! General informations:
- Preparation: 20 minutes ;
- Cooking: 6 minutes
- Quantity: with these doses you should be able to obtain about 11 waffles, but it also depends on the type of machine you have;
- Once cooked, you can freeze them and keep them in the freezer for up to 4 days .
Ingrediants:
- 40 gr of erythritol ;
- 115 grams of almond flour ;
- 10 g of inulin ;
- 10 grams of oat fiber ;
- 150 gr of fresh cream ;
- 3 eggs ;
- 15 gr of melted butter (not hot);
- a sachet of vanillin ;
- seasoning to taste;
As you can see, yeast is not present in the ingredients because by rising the waffles become spongy, more delicate and difficult to take out of the mold. Preparation:
- Lightly butter the molds to facilitate the extraction of the keto sweets;
- Preheat the waffle maker ;
- Take a very large bowl and put all the ingredients in it;
- Take a whisk (hand or electric) and start mixing until it forms a fluid batter;
- Now pour the mixture into the molds until they are almost full (do not fill them completely!);
- Close the lid;
- If you also do not have a temperature-controlled machine but it self-regulates, count 6 minutes from this moment ;
Be careful not to overcook them. The first time maybe give it a try and after 4 or 5 minutes open the lid to see how your machine cooks. - Take the first waffles out of the machine and pour in the remaining dough (based on the number of waffles your machine makes). Remember to always mix the batter before pouring it.
- After placing the waffles on the plate, “season” to taste or leave them natural. An example of a topping is some low carb whipped cream and jam.
Soft cake to soak
A perfect cake for breakfast or snack, to be accompanied with a hot chocolate or tea.
Depending on your personal taste, it may be a bit dry. In this case you can cut it in half and stuff it with keto jam. General informations:
- Preparation: 20 minutes ;
- Cooking: 30 – 40 minutes ;
- Storage: out of the fridge for 2 days .
Ingrediants:
- 200 grams of almond flour ;
- 80 grams of brown rice flour ;
- one egg ;
- 2 tablespoons of corn oil ;
- a sachet of baking powder ;
- sweetener to taste
- water to taste
Preparation:
- Take a bowl and place inside: the two flours, the sweetener (but only if it is powdered) and the yeast;
- Add the oil and the egg and mix using a whisk or a wooden spoon;
- Preheat the oven to 180 ° C
- Now pour the water and continue mixing until the mixture is creamy enough;
- Take a 28 cm hinged cake pan , grease and flour it lightly and then pour the dough into it;
- Place in the oven and cook for at least 30 minutes . Check with a toothpick if the cake is ready, otherwise continue to cook without exceeding 40 minutes .
Birthday cake
The latest recipe is also the most fun to make: a birthday cake! Who said that you have to give up sweets even on the day of your party
You can prepare this cake and not feel guilty in the least for not even for a second. General informations:
- Preparation: 30 minutes ;
- Cooking: 15 minutes ;
- Pause time: 70 minutes ;
- Storage: 2 days in the fridge. When you want to eat it, remember to take it out of the fridge at least 30 minutes before .
Ingrediants:
- 25 grams of whole milk ;
- 3 eggs ;
- 3 tablespoons of butter to melt;
- a teaspoon of vanilla extract ;
- a teaspoon of stevia ;
- a pinch of salt ;
- 1350 grams of almond flour ;
- a teaspoon of baking powder (powder)
Procedure:
- Take a large bowl and put in the milk, the butter that you have previously melted (but it must not be hot), the eggs, the vanilla and the stevia;
- Mix and then add the flour, continuing to turn the dough until it appears homogeneous and without granules;
- Now add the salt and yeast;
- Take the mold, butter it and flour it;
- Pour the mixture into the mold
- Bake the cake in the center of the oven for about 15 minutes or until the toothpick comes out clean;
- Let the cake cool for at least 10 minutes on a wire rack;
- Turn the cake and let it cool for at least another 30 minutes ;
- While the cake is cooling, make the icing;
- Glaze the cake with keto chocolate whipped cream;
- Refrigerate for 30 minutes to allow the icing to set at its best
Icing
To create the icing (keto chocolate whipped cream) you need to:
- put the previously softened butter in a medium-large bowl together with the stevia, cocoa powder, cream and vanilla.
- take an electric whisk and try to mix everything until the glaze is smooth and soft;
- frost the cake using an offset spatula.
Tips and solutions for the birthday
cake Making a birthday cake is always a big undertaking, or so we imagine it in our head!
Follow these tips to avoid running into problems or possibly solve them:
- The pan must be non-stick and you must grease and flour it correctly. If this does not happen, the cake will remain glued to the pan and you will have to ruin it to remove it;
- Go for processed Dutch cocoa powder. It is less acidic and softer than the classic cocoa powder;
- Before frosting, make sure the cake is completely cooled. In fact, putting the icing on keto (and not) sweets that are still hot, would force you to do it all over again because it would melt.
From whatever recipe you want to start, always remember that a dessert to finish the meal, increases the good mood and sometimes, is just what you need to have the tenacity to continue a diet.
