Skin aging: what is glycation
Glycation is
that reaction in which sugar molecules bind to proteins. The molecule formed by the bond between sugar and protein, called glycoprotein, undergoes various transformations, to give rise to the advanced end products of glycation, or more simply Ages (Advanced Glycation End-products). Ages, accumulating over time in the body, alter the structure and function of proteins , including those of collagen and elastin, the two most abundant proteins in the skin. By making them more rigid, they inhibit their elasticity, causing the formation and accentuation of wrinkles and highlighting skin aging .
The Ages that are formed inside our body are called “endogenous”, but they can also be introduced with the diet and in this case we speak of “exogenous” Ages. Both also favor inflammation and oxidative stress , which are at the origin of numerous pathologies.

Sugar enemy of the skin
The formation of endogenous Ages is mainly due to an excess of free glucose in the bloodstream. This occurs when there is an abundance of sugars and refined grains in the diet. Both are in fact absorbed as glucose, which is stored in the liver and muscles, but when these reserves are already full, it remains free in the blood before being transformed into fat. When glucose is found in excess in the blood, it binds more easily to proteins, including collagen and elastin.

Sugar is therefore not only an enemy of the line, but also of the skin .
It is therefore necessary to adopt a diet that avoids too sudden increases in blood sugar and then we must not forget to:

  • avoid sugars and sweeteners as much as possible;
  • replace refined cereals and their flours with wholemeal ones;
  • introduce some physical activity every day.

Which foods to choose and which cooking to prefer

Among the foods richest in Ages we find meats, especially the fattest ones, cheeses, especially seasoned ones, baked goods (crackers, biscuits, toast) and packaged ones, considering that often the industry specially adds Ages to the products, to make them tastier.
The formation of Ages is also favored by cooking at high temperatures and with dry heat , such as those on the plate, grill and oven. Much safer and therefore to be preferred are steaming, stewing or boiling. The same food, therefore, if cooked in a different way, can bring a different amount of Ages. For example, boiling a potato compared to frying it, eating raw or stewed meat compared to grilled meat, is quite different.
In all cases, it is good that on the table there are never :

  • fresh fruit;
  • dried nuts;
  • vegetables;
  • i legumi;
  • whole grains;

all foods naturally low in Ages and rich in vitamins and antioxidants.

How to avoid premature skin aging
If no one can escape the normal physiological process of aging, it is equally true that everyone can adopt a lifestyle that allows them to limit premature skin aging and delay its onset .
Among the various strategies that can be put into practice, nutrition, as we have seen, certainly plays a very important role. The Western diet provides a large amount of Ages every day; it would be enough to simply halve the income , with a greater awareness in the way of eating, to limit the damage as well.
