The result is crunchy on the outside, tender and juicy on the inside. The cooking process, in fact, makes the meat so soft that it allows it to detach itself from the bone. Obviously the process is very long, about 45 minutes, which you can take by tasting some local beers.

Where to eat in Prague: best restaurants, typical bars and street food
The traditional cuisine of Prague is composed for the most part of meat and is not among the simplest to digest: goulash, goose and duck, as well as particular roasts such as svickova, a beef roast served with cream sauce, blueberry jam, whipped cream, knedliky and a wedge of lemon.
Among the desserts not to be missed is the trdlo: a particular type of bread sprinkled with sugar and cinnamon, rolled on a stick and baked in the oven: it is filled according to personal taste and it is delicious to say the least.
